The FED Lab team has been busy this summer conducting participatory asset mapping workshops in each of our four study communities. Through these workshops, we are working with local community members to identify what resources exist within each community to support the food practices and general wellbeing of people living alone, think through gaps or barriers to that support, and brainstorm ideas for future actions or interventions to support people who live alone.
Congratulations to Iulia Ciubotariu for successfully defending her Master’s thesis in Food Science & Human Nutrition!
Iulia’s thesis examines the fascinating intersection between mental health and household food practices in the context of living alone.
She was co-advised by Dr. Oleschuk and Dr. Melissa Pflugh Prescott in Food Science & Human Nutrition.
Since January 2023, members of the FED Lab team have been working with Bethel New Life in Chicago, IL to better understand the experiences of low-income seniors living alone. The Lab recently held a follow-up event at Bethel, showcasing our preliminary findings & holding important conversations about the study’s next steps. Stay tuned!
